Almond milk works as a great dairy substitute, being safe for those who are lactose intolerant or have gluten and casein allergies.
Like cow's milk, pure almond milk boasts an impressive

Soak 1 cup of almonds in filtered water for about 8
hours.
After about 20 minutes of soaking, the water starts to brown, you can see the dust and residue from the skins being released into the water, this is why I like to change the water 2 - 3 times during the soaking process.
Drain and rinse the almonds.
Place almonds in a blender with 3 cups of filtered water.
Blend into a creamy mixture.
For sweeter milk you can add a few drops of vanilla, cinnamon or honey and blend again for a few seconds.
Strain your milk by using a milk bag or a fine strainer.
Store in the refrigerator and try to use within 3-4 days.
Keep the almond meal to use in cakes, cookies or a dip. I
will add more recipes with almond meal in posts to come.
I used my left over
almond meal as oatmeal for breakfast by adding some blueberries, almond milk,
honey and cacao.
