Vegetable muffins


 

Recipe: 

3 cups Organic Self-Raising Flour, sifted
1 teaspoon baking powder
3/4 cup cheese (grated)
1 - 2 cups silver beet
1/4 cup corn kernels
1/4 cup grated zucchini
1/4 cup red capsicum
1/2 onion
1/2 cup oil
1 tablespoon Wholegrain mustard
2 eggs
3/4 cup rice milk

 



Preheat oven to 180^C

Combine flour, baking powder, onion, cheese, silverbeet, corn, capsicum and zucchini in a mixing bowl.




Combine oil, mustard, egg and milk into a separate bowl and whisk.

 



Add egg mixture to the flour mixture and combine.



 

Spoon into patty pans and bake for 30minutes or until cooked. Test with a skewer.
 

Makes 12 of these delicious treats.

I like to eat mine heated up with a little tomato relish.

You might like to freeze a couple to take for lunch.
