Lentil Spaghetti Bolognaise

Recipe:

1 large onion
2 cloves garlic
400g tin lentils
½ fresh Chilli (optional)
1 teaspoon of mixed herbs
2 cans diced tomatoes
1 cup Mushrooms (diced)
Pinch of raw sugar (optional)
Brown or white spaghetti
Fresh Basil or Parsley to garnish

Fry the onion and garlic using Rice Bran Oil for 1 minute. Add lentils, tomatoes, mushrooms, chilli, sugar and mixed herbs and simmer for 15-20minutes.
Garnish with Basil leaves or Parsley.

Serve on a bed of pasta and enjoy :)

You can use this Lentil mixture on top of baked potatoes, corn chips, rice or wraps. Be a little creative.

Using the same tomato base and adding kidney beans instead of lentils I made my favourite meal,

Nachos

Chopped raw broccoli, red capsicum, pumpkin seeds and cucumber.

Mushrooms, corn, parsley and freshly grated cheese

Healthy Tip:
I love my chips but I do make sure I only have plain chips as they have less ingredients. Try reading ingredients and making a simple change to plain rather than flavours.  A simple rule: If you don’t know what the numbers or ingredients mean on the back of the packet then you don’t really know what you are putting into your body.

Here is a quick example. In this packet of flavoured chips there are 16 different ingredients.

In this plain packet of chips there are only 3 ingredients which are easy to recognise.

Enjoy :)
